Foursquare Premise Rum is one of three Exceptional Cask Selection 2018 releases from Richard Seale’s Foursquare Distillery. The Premise is Exceptional Cask Selection VIII, the other 2018 releases are the Foursquare Dominus and Foursquare 2005 Cask Strength.
Foursquare Rum is produced by R L Seale, one of Barbados’ oldest trading houses, a family-owned business whose involvement in rum-making extends from father-to-son since 1820. Current head distiller, Richard Seale, is one of the region’s most innovative distillers and blenders and has a passion for producing perfect rum with great flavour. The Foursquare Distillery occupies the site of a former sugar factory that dates back to 1636 and, as one of the most modern and efficient rum distilleries in the world, is designed to be both highly energy efficient and environmentally friendly. Foursquare rum is made from locally owned and sourced sugar cane converted to molasses, fermented very slowly over 44 hours with South African yeast and then distilled. The rum is a blend of pot still and column still rums. The pot still rum brings complexity and flavour whilst the column still rum add balance and aroma.
Foursquare Premise Rum is a labelled as single blended rum which, in the proposed Gargano / Seale Categorisation of Rum, is a blend of pot still and traditional column rums, the direct comparison being with Blended Scotch Whisky – read more here. The Foursquare Premise Rum is, therefore, a blend of column and pot still distilled rums. The rum spent a initial maturation period of 3 years in ex-Bourbon casks before it was transferred to ex-Sherry casks for a further 7 years maturation, 10 years in total. It was bottled in January 2018 at an ABV of 46%. As with all of the Exceptional Cask Selection range nothing is added to sweeten or colour the rum.
